Ingredients:
1 medium butternut squash, peeled, seeded, and cubed
2 tbsp olive oil
2 tbsp pure maple syrup
1 tsp cinnamon
½ tsp nutmeg
¼ tsp ground cloves
Salt and pepper to taste
Optional garnish: chopped pecans or fresh thyme
Instructions:
Preheat oven to 400°F (200°C).
In a large mixing bowl, toss the butternut squash with olive oil, maple syrup, cinnamon, nutmeg, cloves, salt, and pepper.
Spread the squash evenly on a parchment-lined baking sheet.
Roast for 25-30 minutes, stirring halfway through, until the squash is caramelized and tender.
Garnish with chopped pecans or fresh thyme before serving.
